Delicious diabetic almond Christmas cake- Sugar free. Guilty free.


Here's a delicious and diabetes-friendly Christmas cake recipe that's lower in sugar and carbohydrates:

  • Sugar-Free Almond Flour Christmas Cake

Ingredients:

For the Cake:

- 2 cups almond flour

- 1/2 cup coconut flour

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- 1/2 cup unsalted butter, softened

- 1/2 cup sugar substitute (e.g., erythritol or stevia)

- 4 large eggs

- 1 teaspoon vanilla extract

- 1 cup unsweetened almond milk or coconut milk

For the Frosting:

- 8 ounces cream cheese, softened

- 1/4 cup powdered sugar substitute

- 1 teaspoon vanilla extract

#### Instructions:

For the Cake:

1. Preheat the oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.

2. In a bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.

3. In another large bowl, beat the softened butter and sugar substitute until creamy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. Gradually add the dry ingredients to the wet ingredients, alternating with almond milk. Mix until well combined.

5. Pour the batter into the prepared cake pan and smooth the top.

6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

For the Frosting:
